Utilizing Consumer Perception of Edamame to Guide New Variety Development

Consumption of edamame (vegetable soybeans) has increased significantly in the U.S. over last 20 years. Although market demand been increasing, most is still imported from Asian countries. A team multistate plant-breeding programs mid-Atlantic and Southeast focused on developing new breeding lines that grow well deliver what domestic growers, processors consumers need expect their edamame. In our study, sensory evaluation was used to identify genotypes attributes preferred by support selection criteria. first year (reported as “screening study”), were grown three locations: Newport, AR, Blacksburg Painter, VA. second “validation 10 selected after screening study VA, Portageville, MO, Stoneville, MS. both years research, untrained participants (adults; vegetable not allergic soy; N ≥ 50) a traditional 9-point acceptability (hedonic) scale (1 = “dislike extremely”; 9 “like extremely”) evaluate overall-liking, aroma, appearance, taste, texture, 5-point “not sweet,” 5 “extremely sweet”) sweetness intensity. Next, check-all-that-apply (CATA) list terms describe characteristics each sample. Overall different among all ( p < 0.05). Samples described “bitter,” “sour” (flavor) or “starchy” (texture) associated with lower scores while “salty” “sweet” correlated higher acceptability. Sensory data select best use defined decision process based consumer data. The validation tested decisions further supported genotype choices. powerful tool direct breeders improve develop genotypes.
